The is a compendium of all things essential for beginners to home cooks. Offers advice on what to use when you're out of key ingredients without making a mad dash to the store to creating food that is family friendly and not "chefffed up." You know, where a chef takes a favorite food and throws in too many odd & unidentifiable ingredients leaving you guessing what's on your plate. Also, if you like reading cookbooks like a great novel, this one fits that bill, too.Have already tagged several recipes and am looking forward to making them using the tips & techniques to turn out a better version of my dish while keeping the same familiar flavor. Would make an excellent gift for a bride to be, anyone who enjoys cooking, or is just learning. Highly recommend.

I love ATK and proudly own several of their books. ATK is like Consumer Reports for cooking. They do an outstanding job of testing various approaches to a recipe and explain what works and doesn't work.I purchased this book for a friend who shares my passion for ATK. I couldn't give it to her! I honestly felt like I would insult her by giving her this book. While it does have some real gem of suggestions, it's hard to get past some of the overly basic parts. It would be a GREAT gift for someone who is looking for a great guide of basic information peppered with some wonderful parts that explain how things work.Some of the tool reviews get a bit lengthy. Do we need two pages dedicated to how a pepper mill works? Nah, not really. I'm not sure that as much detail was provided would be needed to purchase maple syrup for example. Product reviews take the first 60 pages. There is a small section on how to clean equipment that is fairly basic.The section on how to stock your fridge is useful. It explains what various fruits/vegetables/meats are and how to shop for them.The In the Kitchen and At the Stove section has nuggets and very basic info. It is comprehensive in that it covers a great many things such as how to organize your fridge, how to hold a knife, food safety. I like the "Science of" section that explains the science of learners, alcohol, salt, etc. But the recipes are fairly basic ones. It has recipes on how to boil an egg, make scrambled eggs, etc. The recipes are good, basic mostly Americana fare: how to make potato salad, grill a hamburger (who knew butter is the secret ingredient?).The book wraps up with an appendix reiterating the tool/product/food choices.Overall, it is a nice pulling together of basic information. It does get bogged down a bit in the basics which distracts from some of the very useful gems. I wouldn't purchase if you are expecting recipes with the normal complexity of ATK.

This book is great for a lot of things, but after purchasing over $1000 worth of the items they say are their top rated, I cannot recommend that part of it. The prices need to be updated (the cheap wooden spoons they recommend at less than $2 actually sell for over $15 each) and even then, I have had several of their recommendations turn out to be duds. The expensive cutting board? Split, those overpriced spoons? broke. Proceed with caution and believe the actual reviews of people who have not had good experiences. I think a lot of people review a produce the first week they get it and then forget about it and a month later, some of those reviews should probably be amended.

usually i read the reviews before purchasing the book..happy that i did cause they are great. the book is awesome, organize, pictures, directions. everything you need to set up your kitchen either as a newbie or old timer like me. although my mom taught me as a child to cook, i realize there are still things i need to learn at my age and i am in my fifties. the only complaint i would have is the fact i didn't realize the book was be like a encyclopedia- heavy. that only draw back for me cause i keep forgetting until i pick the book up..laugh..seriously a must for any cook or baker in their household. best of all the book as given me confident to upgrade my skills in the new year 2017. my hubby loves to taste test and i love to cook. a win for everyone.

Yes I agree: America's Test Kitchen's book tend to be repetitive and annoying (they were the first person to figure out the right ratio between lentils and stock, for example). If you only get 1/4 of their books you aren't missing anything. But this book is quite good because it covers the things that a new home cook might want to know about. It came out in 2016 and has its most recent food and equipment reviews (I've found their suggestions always good).I'd recommend this book, 100 Recipes, and America's Test Kitchen Cooking School for new home cooks. After that just get what interests you. Being an ATK completest is just going to cost you a lot of money. Seriously, just how many recipes are there?

I am a big fan and past subscription holder to Cook's Illustrated Magazine. This book is an excellent summary of their articles and tips and has many good basic recipes, too. It is almost like a Consumer's Report for cooks!

This book has very helpful information. For example, they tested different plant-based milks in making baked goods and found that oat milk seems to produce the best result. So far, for entrees, I have only made the Tempeh chimichurri, and the result was delicious.

I've learned a lot of things about cooking, from ATK. They are amazing. Explain everything in detail, why it work, and why doesn't etc. Wonderful book for people who learn basics, like me. Because of America's Test Kitchen I fell in love with cooking.

It’s a good book but a bit boring. About half of the pages are just repetition of their other books and in my humble opinion their explanations are unnecessarily too lengthy.
